Bacon + Cheese Stuffed Meatballs

OK, I have been in desperate need of some comfort food lately.  I decide I was going to try something a friend of mine recently made, bacon and cheese stuffed meatballs.  These were amazing, I mean AMAZING.  I used just regular breakfast bacon, Velveeta cheese, and ground beef.  Nothing else.  No breadcrumbs or eggs to bind them together, and they stayed closed up fine.


First I got together my supplies. My Velveeta slices,








my crumbled bacon (pre cooked),






and my ground beef.






I like the 20% fat ground beef, I think it has more flavor, and most fat cooks off and drains away anyway.  Then, I made pattys of ground beef and made a little pile of bacon and a couple small pieces of Velveeta cheese in the middle.







Then I curled them up in my hand so I could close them up, forming meatballs.







Then I popped them in the oven at 350 degrees for about 40 min. 







They were not to big so they were done fairly quickly. 







And a glimpse at the finished product. 








Let me tell you , these were soooo good.  I am actually making them again tonight because my husband loved them so much he wanted them again.  They only thing I am going to change is I am going to use more cheese and bacon in each.  We like them loaded!
